Meal Planner 2


Breakfast

CAMPER'S BREAKFAST

4 medium potatoes, sliced
2 onions, sliced
2 cans Spam
12 eggs, beaten
1/4 cups milk
oil
salt and pepper to taste

Heat 1in oil in large skillet. Cook potatoes and onions until potatoes are soft. Drain oil. Add eggs, milk, and Spam. Stir constantly until eggs are set. Serve.

CHEDDAR BISCUITS

1 3/4 cups flour
2 tsp baking powder
1 tsp sugar
½ tsp baking soda
½ tsp salt 1/4 tsp dry mustard
1/3 cups shredded cheddar cheese
3/4 cups buttermilk
1/4 cups margarine, softened

In medium pot, combine flour, baking powder, sugar, baking soda, salt, dry mustard.  Cut in margarine with pastry cutter until mixture resembles coarse meal.  Stir in cheese and buttermilk.  On lightly floured surface, roll dough to 1/2in thick.  Use 2in biscuit cutter and cut into rounds.  Keep rolling and cutting until all dough is used.  Place on greased cookie sheet and bake in cardboard oven at 450 until tops are light brown.


Lunch

HOOTER SANDWICHES

8 slices turkey lunch meat
8 slices cooked ham lunch meat
8 slices Swiss cheese
16 slices rye bread
1 1/2 cup flour
1 tbs baking powder
1 1/3 cup water
1 egg, beaten
oil
powdered sugar

Place 1 slice turkey on 8 slices of bread. Top with slice of Swiss cheese and slice of ham. Top with remaining bread. Cut each sandwich into quarters. Use toothpicks to hod together. Mix flour, baking powder, and salt well. Add water to beaten egg and add to flour mixture. Mix well. Dip each sandwich quarter into batter. Heat 1in oil in large skillet. Fry dipped sandwiches until golden brown. Remove toothpicks and sprinkle with powdered sugar. Serve warm. A taste treat from Fuzzy and the Hooters, NC-543.

Don't forget the import stuff such as drinks and chips.

 


Dinner

Mexically Sally

1 lbs Ground Beef
½ Medium Finely chopped Onion
1 30 oz can chili beans
½ Head Chopped Lettuce
½ lbs Grated Cheddar cheese
1 Package Taco Seasoning

1 Can Taco sauce
1 Bag Tortilla chips (Fritos)
Sour cream
1 Large Diced Tomatoes
Spice to taste with Hot Peppers or Chilies.

Brown beef and onions. Drain fat. Add Taco seasoning, other spices, and chili beans. Simmer until well heated. Chop lettuce and tomatoes. On your plate put chips and then add meat mix, taco sauce, lettuce, tomatoes, cheese and sour cream. Barry N. Lindley, T-77, Cross Lanes.


Desert

FUNNEL CAKES

1 egg
2/3 cup milk
2 tablespoons sugar
1/4 teaspoon salt
3/4 teaspoon baking powder
1 1/3 cup sifted flour

Beat the egg and add the milk. Sift sugar, salt, baking powder and flour together. Add the milk and egg. Beat until smooth, pour batter into funnel holding finger over bottom. Allow batter to fun out of the funnel into hot deep fat (375 degrees) making a swirl from the center of the pan to the outer edge. Cake may be made any size wanted. Fry until golden brown. Drain on paper towel. Powdered sugar may be sprinkled over cake if desired.
